Main Purpose of the Role
To deliver appetising, nutritious meals while ensuring exceptional customer service and maintaining high standards for safety, compliance, and food quality.
Key Responsibilities
Compliance
Ensure all food preparation and service follows health & safety, food safety/HACCP, allergen management, and standards.
Follow correct procedures for storing, preparing, cooking, and serving food, including labelling and temperature checks.
Maintain excellent hygiene and cleanliness, completing cleaning schedules and identifying improvements.
Accurately complete due diligence records and take corrective actions where needed.
Operate safely using standard operating procedures, HACCP plans, Safe Systems of Work, and relevant training.
Customer Focus
Provide high-quality meals for guests, colleagues, and visitors, including those with medical dietary needs.
Ensure meal preparation, presentation, and service remain consistent and appetising throughout shifts.
Manage and oversee the provision of safe, suitable meals for those with specific dietary requirements.
Run pre‑shift briefings covering dish details, portion sizes, allergens, and any special requirements.
Monitor food quality during service and address issues proactively.
Colleague & Commercial Responsibilities
Support the development of Assistant Chefs and Catering Assistants; lead the team when the Catering Manager or Head Chef is absent.
Manage stock during shifts and prepare food in line with production plans, focusing on waste reduction and cost control.
Use Nutritics recipe management software for accurate scaling and safe food handling.
Maintain equipment, delegate tasks effectively, and help ensure a safe, productive working environment.
Self‑Management & Professional Development
Work with Catering Management to accurately report dietary needs and action post‑audit improvements.
Act as a positive role model for junior team members and maintain ongoing personal development.
Attend departmental meetings, support centre operations, and respond effectively to emergencies.
Centre‑Wide Support
Contribute at a senior level to the overall operation of a residential activity centre.
Assist other departments as needed and support colleagues, guests, and visitors across the centre.
