FOOD, BEVERAGE MANAGER, £38,000 TO £42,000 (DEPENDING ON EXPERIENCE) BASED OADBY AREA – WORKING 5 DAYS OUT OF 7
RESPONSIBLE TO - GENERAL MANAGER
RESPONSIBLE FOR – BARS SUPERVISOR, HEAD CHEF AND FRONT OF HOUSE SUPERVISOR
RESPONSIBILITIES
Ensure high quality food and drink delivery to customers at all times
Analyse current food and beverage Suppliers to ensure profit maximisation on all food and drink products making cost savings where possible.
Suggest to General Manager new ways to grow and improve turnover and profitability in relation to food, drink and functions events.
Ensure food and drink gross profit margins are in line with agreed targets.
Ensure all bar, food and functions staffing costs are managed closely and kept within budget.
Listen and encourage staff for new ideas on improvements which in turn will boost morale.
Ensure front of house and back of house F and B is always presented to the highest standards of cleanliness before each event by conducting quality checks 24 hours prior.
Ensure 5 star hygiene rating is retained following council visits.
Ensure all customer complaints are followed up and dealt with in a professional manner.
Build strong relationships with food and drink suppliers
Assist Head Chef in menu writing
Ensure regular monthly Food and Beverage meetings are conducted ensuring circulation of minutes to team plus a copy to General Manager within 48hours of meeting.
Compile a full staffing cost report within 48 hours of every event function detailing full income and expenditure to Accounts Manager.
Ensure all contracted food outlets issue prompt payments in line with agreed contracts.
Ensure all food and beverage invoices are double checked, signed and forwarded to Accounts
Manager on at least a weekly basis.
Ensure the Cash Office and Accounts department are provided with food and drink breakdown elements following each event
Conduct regular documented performance reviews with key staff, providing copies to General Manager.
To ensure all staff are presented in a smart and professional manner at all times.
Ensure all key staff are informed in advance of stock take dates, liaising with Accounts Manager to ensure all paperwork is prepared for his visit.
Ensure that both Head Chef and Bars Supervisor are always on site during a stock take visit.
Be responsible for organising regular meetings to discuss monthly stock take reports with General Manager, Catering Supervisor, Bars Supervisor and Head Chef.
Ensure Racecourse adheres to all aspects of premises licence regulations.
Ensure all health and safety concerns are dealt with, liaising with General Manager where necessary.
Ensure that all Food and Beverage Staff are fully trained to an acceptable standard.
To ensure all non-event food and drink related functions are managed professionally.
To carry out any other relevant tasks as instructed by General Manager as instructed from time to time.
