From refined evening service to their much-loved Sunday lunch, they offer exceptional food using the very best locally-sourced and seasonal produce.
We are now seeking a talented and passionate Department Head Chef to lead the kitchen team and bring continued innovation, flair, and excellence to their fine dining offering.
The Role:
As Department Head Chef, will be charged with recreating a restaurant menu with a view to increasing sales.
You will have a deep appreciation for Irish cuisine, a strong farm-to-fork ethos, and a natural flair for seasonality and creativity.
You will work closely with senior management, and manage the culinary aspects of the restaurant’s offering – with creative flair and a collaborative and personable working style.
Key Responsibilities:
Lead the kitchen team in delivering a fabulous and creative menu and consistent, high-quality cuisine aligned with our 4-star standards
Develop and evolve the restaurant’s menus using fresh, seasonal, and locally-sourced ingredients
Maintain the highest standards of cleanliness, food safety, and presentation at all times
Collaborate with the FOH team to ensure a seamless guest dining experience
This will be a department head chef who is supported by exec head chef, banquet head chef and sous chef.
The Ideal Candidate:
Proven experience as a Head Chef or Senior Sous in a quality-focused kitchen ideally in an Irish property.
Strong leadership and people management skills
A deep passion for modern Irish cuisine and fine dining
Excellent organisational and time management abilities
Creativity and flair for developing dishes that celebrate flavour and seasonality
A sound understanding of HACCP and kitchen compliance standards
First class creative flair and menu planning ability
First class communication skills and the ability to work with all types of professionals
