Job description:
Job Purpose
To ensure that all pork and gammon products are manufactured, stored, and distributed in compliance with food safety, quality, legal, and customer standards. The QA Technician will monitor production practices, conduct inspections, carry out sampling and testing, and support the factory in maintaining high standards of hygiene, safety, and quality.

Key Responsibilities
· Quality Control & Compliance
o Monitor production lines to ensure compliance with HACCP, food safety, and quality procedures.
o Verify product specifications, labelling, weights, and packaging are correct and meet customer requirements.
o Ensure compliance with BRCGS, BMPA and other relevant industry standards.
· Auditing & Record Keeping
o Conduct internal audits (GMP, hygiene, traceability, CCP checks) and report findings.
o Maintain accurate QA documentation, records, and reports for legal and customer compliance.
o Assist in customer and third-party audits.
· Sampling & Testing
o Collect and analyse samples of pork and gammon (raw, in-process, finished product).
o Carry out environmental, microbiological, and organoleptic testing as required.
o Monitor shelf-life samples and report deviations.
· Issue Management
o Report and escalate non-conformances to the QA/Technical Manager.
o Support investigations into customer complaints and quality incidents.
o Assist in implementing corrective and preventive actions.
· Team & Training
o Support production staff with quality and food safety awareness.
o Provide guidance on hygiene, allergen control, and best practices.
o Promote a strong food safety culture within the factory.

Key Skills & Competencies
· Knowledge of HACCP, food safety management systems, and quality assurance processes.
· Experience in meat or food manufacturing (pork/gammon processing desirable).
· Strong attention to detail and ability to follow procedures.
· Good communication skills — confident working with production teams and management.
· Organised, reliable, and able to work independently under pressure.

Qualifications & Experience
· Previous experience in a QA/food safety/technical role in food manufacturing (essential).
· Knowledge of BRCGS standards and retailer codes of practice (preferred).
· Food Hygiene and HACCP training (minimum Level 2; Level 3 desirable).
· GCSEs (including English and Maths) required; science/food-related qualification desirable.
